The state of food science and technology in St. Lucia

The coconut industry is the most organised, producing coconut oil, laundry soap and coconut meal for export. Other minor products are produced, mainly on a cottage industry scale, for the domestic market including fruit preserves, chilled and frozen meat and beverages. Institutions have been established to promote the food processing industry such as an Agro-Processing Centre to train young people in these techniques and the Produce Chemists' Laboratory to provide advisory, technical and analytical services
