ITALIANO: Sono stati studiati i composti mutageni che si formano nel sistema modello zucchero-aminoacido (ribosio-lisina). Questi composti che nel test Ames risultano essere mutageni diretti, sono diversi dai composti promutogeni aminoimidazoazaarenici (AIAs) isolati con cloruro di metilene dalla carne cotta. I composti da noi studiati non possiedono la struttura policiclica planare dei composti AIAs; presentano molecole polari, di natura acida con peso molecolare superiore a 500. Ad essi potrebbe essere attribuita la quota di attivita mutagena che permane nei prodotti carnei termicamente trattati dopo estrazione con cloruro di metilene.
Show more [+] Less [-]English. The mutagenic compounds produced in model system sugar-amino acid (ribose-lysine), by the Maillard reaction, are investigated. These chemicals active on Salmonella typhimurium strain TA 100 without S9-mix, do not fit into the class of the promutagen aminoimidazoazaarene compounds (AIAs), isolated from cooked meat with methylene chloride. The compounds under investigation don't posses mullticyclic planar structures and have acidic molecules with molecular weight larger than 500. They may be responsible for the portion of mutagenic activity which cannot be isolated from cooked meat with methylene chloride.
