ITALIANO: La misura dell'attivita dell'acqua (A(, w)) e in grado di fornire utili indicazioni sulla stabilita chimica e biologica dei prodotti alimentari. Dopo aver definito i concetti di A(, w) e di isoterma di adsorbimento vengono sinteticamente trattati i seguenti aspetti: (a) Espressioni matematiche proposte in letteratura per descrivere le isoterme di adsorbimento dei sistemi alimentari. (b) A(, w) dei sistemi ad alto e basso contenuto in acqua. (c) Previsione dell'A(, w) dei sistemi ad umidita intermedia. (d) Influenza dell'A(, w) sulle principali reazioni degradative.
